Nada Moo and Camping!

Part of living a healthy life is enjoying the life you're given.
I got to spend a wonderful weekend with my family camping. I always enjoy going camping with friends, but its definitely a blessing to go with my family. It was very relaxing to soak up the beauty that God had created in nature. This is me by the river we set up camp by.




Ok, Nada Moo's coconut ice cream is really good! It's all natural coconut milk & agave nector. I got this pint and i've had it for about a week cause 2 teaspoons satisfies my sweet tooth. Its good for me because Im sensitive to soy product and dairy.

Exercise for better Health

Well just another update.

Today i went for a 20min run and then at night i went for a 30min bike ride.

Im so proud that i made it through today without eating sweets. I never realized how often I went for a sweet snack. Anyway tonight my parents ate frontier sweet rolls in front of me and even offered me a bite but i resisted and had some chai tea instead.

Today i ate Honey Nut Cheerios for breakfast, Zucchini and tortilla for lunch, and i was going to some smoked chicken for dinner but it wasn't done yet and resorted to a hot dog with mustard. Not a lot of eating for me but its just the beginning and I plan on going to the store and buying some more food.

I heard of this Ice Cream product from Whole Foods called "Nada Moo" its dairy and sugar free! Im going to buy it tomorrow because its made from Cocconut milk. I'll let you know how it is.

Cookie Monster!

Ok I am notorious for the amount of cookies I can eat! Sugar in general is my downfall to eating healthy. One night out with friends I found a package of Chewy Chocolate Cookies someone had brought and when I was half way through the package my friend tried to pull them away from me so I grabbed 5 cookies all stacked together and took one big bite into all five!

All this to say is that I have a problem... a big problem and I could use healthy low sugar recipes or snacks. I've vowed to stay away from candies, cookies and sugar filled products until August with an exception of a friends wedding July 25.

Another thing though is that I have to stay away from high fat contents (gall stones) and soy (allergy)

The Low Budget of a College Student...

Right now I'm in College with one year to go to get my BA in Nursing. Although I love to learn new things about health and diseases Im not particularly happy about the malnurished wallet I have. So whats for dinner tonight?

Well I am currently waiting for the chicken to defrost once that happens:

Im going to cut a green bell pepper and a red bell pepper (couldn't afford a golden bell pepper- but if you can then buy it) you really only need to use less then half if it's just for yourself.

I also bought a cheap yellow squash and 2 zucchinis (i love zucchini) to add. Cook the chicken for just a bit in one sauce pan and the bite sized veggies in another. Once the chicken is almost done add the veggies to the chicken and

*chicken chop cubbed
*tortilla
*bell peppers
*zucchini
*yellow squash
* olive oil
*pepper & salt
*fav. seasoning (for chicken)
*add seasoning to veggies if you like more flavor
-put olive oil and seasoning (optional) on bite sized veggies in a fry pan later adding them to the chicken pan until soft. -wow thats simple! enjoy!

my journey to a better life

I am sure I have new ideas on what to blog about every 3 months but I'm most excited about this blog.

-How It Came About: Well I happened to be inspired by, "Diana's Body Journey" blog, which I stumbled upon looking up healthy snack recepies.

-My Own History: I have had stomach problems ever sense I can remember. I was born lactose intolerant then, after building up the lactase enzyme, I found out that I was allergic to Soy, and the worst happened last year when I was staying in Macedonia (a country rich in culture and fatty foods). There, I woke up with terrible abdominal pain and now have abdominal pain almost every other week. So now that I am in the US I went to the doctors and they think I have gall stones. So I'm on a low-fat diet to avoid having my gall bladder removed.

-ALSO: this is about living and loving life! So besides recepies and other health related topics I will probably mention some a few fun days i've had. :)
